Black bean and rice salad

Salad Ingredients
  • 1 teaspoon oil
  • 1 cup rice
  • 1–2 cans black beans
  • 1/2 onion, chopped
  • 1 pepper, chopped
  • 1 cucumber, chopped
  • 1 can corn
  • 1/2 cup cilantro, chopped

Dressing ingredients
  • 1/3 cup vinegar
  • 2 tablespoons lime juice
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder

Instructions
  1. Saute rice in oil. Add water and simmer 20 minutes.
  2. Combine dressing ingredients and mix well.
  3. Combine all ingredients.

Serves 6.
