Tomato and spinach soup

Ingredients
  • 1 tablespoon olive oil
  • 2 cloves garlic
  • 6 tomatoes
  • 1 bag fresh spinach
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 cups chicken broth
  • 1/2 cup semolina
  • 1/4 cup Parmesan cheese

Instructions
  1. Chop garlic and tomatoes.
  2. Saute garlic in olive oil until light brown. Add tomatoes and cook about 3 minutes. Add spinach and cook until wilted.
  3. Add chicken broth, salt, pepper, and semolina. Bring to a boil.
  4. Stir in Parmesan cheese and serve.
