Split pea soup

Ingredients
  • 1 tablespoon olive oil
  • 2 onions, chopped
  • 1/2 teaspoon salt
  • 2 cups split peas, rinsed
  • 6 cups water
  • juice and zest of 1 lemon

Instructions
Saute onions in olive oil.
Add split peas and water. Simmer 30-60 minutes. Add lemon zest and juice.
Puree soup. Salt to taste.
