Lentil tacos

Ingredients
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1 teaspoon oil
  • 1 cup lentils, rinsed
  • 1 tablespoon chili powder
  • 2 teaspoons cumin
  • 1 teaspoon oregano
  • 2 1/2 cups chicken broth
  • 1 cup salsa
  • 12 taco shells
  • 1 1/2 cups shredded lettuce
  • 2 tomatoes, chopped
  • 1 cup shredded cheddar cheese
  • 6 tablespoons sour cream

Instructions
  1. Saute onion and garlic in oil. Add lentils and spices; cook 1 minute.
  2. Add chicken broth. Cover simmer about 30 minutes, until lentils are tender.
  3. Remove cover and cook until mixture is thickened. Add salsa.
  4. Serve in taco shelles with lettuce, tomatoes, cheese, and sour cream.
