Date-walnut cake

 
Ingredients
  • 3/4 cup rolled oats
  • 1 cup boiling water
  • 1/4 cup brown sugar
  • 1/4 cup oil
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon salt
  • 1 1/4 cups whole wheat flour
  • 1/3 cup buttermilk or sour milk
  • 1/2 cup chopped dates
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts

Instructions
  1. Combine oats and boiling water in large bowl. Let sit until water is absorbed. 
  2. Preheat oven to 350 degrees. Grease a 9" round pan.
  3. Add brown sugar, honey, and oil to oats. Add eggs, one at a time, mixing well. Add vanilla, cinnamon, baking soda, nutmeg, and salt. 
  4. Add half the flour, the buttermilk, and then remaining flour. Fold in the dates, raisins, and walnuts.
  5. Pour into pan and bake 25-30 minutes, or until cake springs back when you touch the center.
