- 1 tablespoon vegetable oil
- 1 onion, chopped
- 1 10-ounce package frozen chopped spinach
- 5 eggs
- 2 cups shredded cheese
- 1/2 teaspoon salt
- Preheat oven to 350 degrees F. Grease a pie pan.
- Saute onion in oil (optional).
- Thaw and drain spinach.
- Beat eggs well. Add salt, pepper, cheese, onions, and spinache.
- Pour into pan and bake about 30 minutes, until set. Let cool 10 minutes before serving.
