Crustless spinach quiche

Ingredients
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 1 10-ounce package frozen chopped spinach
  • 5 eggs
  • 2 cups shredded cheese
  • 1/2 teaspoon salt
  • pepper 

Instructions
  1. Preheat oven to 350 degrees F. Grease a pie pan.
  2. Saute onion in oil (optional).
  3. Thaw and drain spinach.
  4. Beat eggs well. Add salt, pepper, cheese, onions, and spinache.
  5. Pour into pan and bake about 30 minutes, until set. Let cool 10 minutes before serving.
