Chiffon cake

 
Ingredients
  • 1 1/2 cups sugar
  • 1 1/4 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 5 eggs, separated, room temperature
  • 3/4 cup water
  • 1/2 cup oil
  • 1 tablespoon vanilla
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon cream of tartar
Instructions
  1. Heat oven to 325 degrees F. 
  2. Whisk together dry ingredients. Add remaining ingredients except separated egg whites and cream of tartar.
  3. Beat egg whites with cream of tartar to very stiff peaks. 
  4. Fold egg whites into batter.
  5. Pour into large tube pan. Tap on counter to remove air pockets. 
  6. Bake about an hour, until toothpick comes out clean. Invert 2-3 hours until completely cool.
