Baked apple pancake

Ingredients
  • sliced apples or sliced bananas
  • brown sugar
  • 1/2 teaspoon cinnamon
  • 4 eggs
  • 2/3 cup flour
  • 2/3 cup milk
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla

Instructions
  1. Preheat oven to 400 degrees F.
  2. Sauté apples or bananas in butter in a 10-inch cast iron skillet. Add cinnamon and brown sugar to taste. Set aside.
  3. Beat eggs. Add remaining ingredients.
  4. Pour batter over fruit in skillet. Sprinkle top with brown sugar.
  5. Bake about 25 minutes, until puffy and golden brown.
