Mediterranean lentil salad

Ingredients
  • 1 cup dry lentils, rinsed
  • 1 cup diced carrot
  • 1 cup diced onion
  • 4 cloves garlic, minced
  • 1 bay leaf
  • ½ teaspoon dry thyme
  • ¼ cup lemon juice
  • ½ cup diced celery
  • ¼ cup chopped parsley
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup olive oil
  • 2 tablespoons vinegar

Instructions
  1. Combine lentils, carrots, onion, garlic, bay leaf, and thyme in saucepan. Cover with water by one inch.
  2. Simmer uncovered 15-20 minutes. Drain.
  3. Combine remaining ingredients to make dressing.
  4. Add remaining ingredients. Toss and serve at room temperature
