Lemon raspberry muffins

Ingredients
  • 2 cups flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 2 eggs
  • 1 cup milk
  • ½ cup canola oil
  • 1 teaspoon lemon extract
  • 1 cup fresh or frozen raspberries

Instructions
  1. Preheat oven to 400 and prepare 12 muffin cups.
  2. Combine dry ingredients. Add wet ingredients. Fold in raspberries.
  3. Fill muffin cups ⅔ full.
  4. Bake 18-20 minutes.

Makes 12.
