Lemon curd

Ingredients
  • 3 eggs
  • 3 lemons
  • 1 stick butter or margarine
  • 1 cup sugar
  • pinch salt

Instructions
  1. Juice and zest lemons.
  2. Beat eggs lightly and mix in lemon juice and rind, butter, sugar, and salt.
  3. Put in double boiler and heat gently, stirring occasionally, until the sugar has dissolved and the curd thickens.
  4. Store in refrigerator for up to 3 months.

Makes 1 pint.
