Farmhouse chocolate cake

Ingredients
  • 5 ounces unsweetened chocolate, chopped
  • 2 tablespoons honey
  • ½ cup boiling water
  • ½ cup butter, softened
  • ¼ cup shortening
  • 2 cups sugar
  • 5 eggs
  • 1 cup mashed potatoes
  • 2 teaspoons vanilla
  • 2 teaspoons baking soda
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1¾ cups flour
  • ½ cup cold water

Instructions
  1. Heat oven to 350 degrees. Grease and flour a 10” Bundt pan.
  2. Combine chocolate and honey with boiling water. Stir occasionally; let melt and cool.
  3. Cream butter and shortening. Gradually add sugar.
  4. Add eggs one at a time, beating at least 1 minute after each.
  5. Add chocolate mixture, potatoes, vanilla, baking soda, salt, and pepper.
  6. Add flour and cold water alternately. Stir until just combined and smooth.
  7. Pour batter in pan and hit on counter to remove air bubbles.
  8. Bake 50 minutes. Cool in pan on rack 10 minutes, then turn cake out. Dust with powdered sugar if desired.
