Blackberry pie

Ingredients
  • 4 cups blackberries
  • ¾ cup sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon butter, melted
  • 1 tablespoon lemon juice
  • 1 tablespoon water
  • 1 tablespoon tapioca
  • 1 egg white, lightly beaten
  • 1 tablespoon sugar
  • double pie crust

Instructions
  1. Preheat oven to 400 degrees.
  2. Toss together berries, sugar, cornstarch, butter, lemon juice, water, and tapioca. Let stand 20 minutes, tossing occasionally.
  3. Roll out pie crust and assemble pie.
  4. Brush top with egg white and sprinkle with sugar.
  5. Place on a baking sheet and bake until crust is golden brown and filling is bubbling, 60-70 minutes. Cover edges of pie if necessary.
  6. Cool completely before serving.
