Pad Thai

Ingredient List 1
  • 1 pound chicken, chopped in bite-size pieces
  • 2 tablespoons oil
  • 5 cloves garlic, minced
  • ½ bunch cilantro, chopped
  • 1 bunch green onions, chopped
  • 2 cups bean sprouts
  • 1 lime, cut in wedges
  • 8 ounces rice noodles

Ingredient List 2
  • 2 tablespoons oil
  • 2 eggs
  • 2 tablespoons vinegar
  • 2 tablespoons lime juice
  • 1 tablespoon peanut butter
  • 2 tablespoons fish sauce
  • 3 tablespoons sugar
  • 2 tablespoons crushed red pepper
  • 1 tablespoon paprika
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil

Instructions
  1. Chop and prepare all ingredients.
  2. Combine all ingredients in list 2 in a bowl.
  3. Soak noodles according to package instructions.
  4. In very large pan or wok, cook chicken in oil. Add garlic.
  5. Add ingredients from list 2.
  6. Drain and add noodles. Add sprouts, onions, and cilantro.
  7. Serve with lime wedges.

Serves 4.
