Lentil soup

Ingredients
  • 1 onion, chopped
  • 3 carrots, chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, chopped
  • 2 tablespoons oil
  • 1 teaspoon oregano
  • 1 bay leaf
  • 1 teaspoon basil
  • 1 14-ounce can chopped tomatoes
  • 2 cups dry lentils, rinsed
  • 8 cups water
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon salt
  • ½ teaspoon pepper

Instructions
  1. Cook vegetables in oil.
  2. Add oregano, bay leaf, basil, tomatoes, lentils, and water. Bring to a boil.
  3. Simmer 1 hour.
  4. Add vinegar, salt, and pepper.

Serves 6.
