Lemon lentil rice

Ingredients
  • 1 tablespoon oil
  • 1 teaspoon mustard seed
  • 2 carrots, chopped
  • 2 cups water
  • 1 cup rice
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • 1 cup lentils
  • 1 can green beans, drained
  • ¼ cup lemon juice

Instructions
  1. Heat oil in saucepan over medium-high heat. Cook mustard seeds until they pop.
  2. Add carrots; sauté 2 minutes. Add water, rice, chili powder, and salt.
  3. Bring to a boil; simmer 15 minutes.
  4. Boil lentils in separate pot 15-20 minutes.
  5. Combine lentils, rice, green beans, and lemon juice.
