Tabbouleh

Ingredients
  • 1 cup bulgur
  • 1⅔ cups boiling water
  • ¼ cup olive oil
  • ⅓ cup lemon juice
  • 1 tablespoon white vinegar
  • 1 cup chopped green onions
  • 1 cup chopped fresh parsley
  • 3 tomatoes, chopped
  • 1 cucumber, chopped
  • 1 teaspoon salt
  • ground black pepper

Instructions
  1. Combine bulgur and boiling water. Cover and let sit 1 hour.
  2. Add remaining ingredients. Refrigerate 1 hour.
