Tomato and spinach soup

Makes 8 cups.

- 1 tablespoon olive oil
- 2 cloves garlic
- 6 tomatoes
- 1 bag fresh spinach
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 4 cups chicken broth
- 1/2 cup semolina
- 1/4 cup Parmesan cheese
Instructions
- Chop garlic and tomatoes.
- Saute garlic in olive oil until light brown. Add tomatoes and cook about 3 minutes. Add spinach and cook until wilted.
- Add chicken broth, salt, pepper, and semolina. Bring to a boil.
- Stir in Parmesan cheese and serve.
