Split pea soup
Ingredients
Instructions
Saute onions in olive oil.
Add split peas and water. Simmer 30-60 minutes. Add lemon zest and juice.
Puree soup. Salt to taste.
Serves 4–6.

- 2 onions, chopped
- 1/2 teaspoon salt
- 2 cups split peas, rinsed
- 6 cups water
- juice and zest of 1 lemon
