Lentil tacos

- 1 onion, chopped
- 1 clove garlic, minced
- 1 teaspoon oil
- 1 cup lentils, rinsed
- 1 tablespoon chili powder
- 2 teaspoons cumin
- 1 teaspoon oregano
- 2 1/2 cups chicken broth
- 1 cup salsa
- 12 taco shells
- 1 1/2 cups shredded lettuce
- 2 tomatoes, chopped
- 1 cup shredded cheddar cheese
- 6 tablespoons sour cream
Instructions
- Saute onion and garlic in oil. Add lentils and spices; cook 1 minute.
- Add chicken broth. Cover simmer about 30 minutes, until lentils are tender.
- Remove cover and cook until mixture is thickened. Add salsa.
- Serve in taco shelles with lettuce, tomatoes, cheese, and sour cream.
