Lemon-scented quinoa salad

- 1 cup quinoa
- 2 cups water
- 1/2 teaspoon salt
- 1 14-ounce can chickpeas
- 1/2 onion, finely chopped
Dressing Ingredients
- 1 clove garlic
- 1/4 cup tahini
- zest of one lemon
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- 2 tablespoons hot water
- 1/2 teaspoon salt
- 1/2 cup cilantro, chopped
Instructions
- Rinse quinoa. Simmer about 15 minutes, until water is absorbed. Drain off any excess water.
- Combine dressing ingredients in mini food processor or blender. Alternatively, chop garlic and cilantro and whisk together.
- Combine all ingredients.
