Lemon-scented quinoa salad

Salad Ingredients
  • 1 cup quinoa
  • 2 cups water
  • 1/2 teaspoon salt
  • 1 14-ounce can chickpeas
  • 1/2 onion, finely chopped

Dressing Ingredients
  • 1 clove garlic
  • 1/4 cup tahini
  • zest of one lemon
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 2 tablespoons hot water
  • 1/2 teaspoon salt
  • 1/2 cup cilantro, chopped

Instructions
  1. Rinse quinoa. Simmer about 15 minutes, until water is absorbed. Drain off any excess water.
  2. Combine dressing ingredients in mini food processor or blender. Alternatively, chop garlic and cilantro and whisk together.
  3. Combine all ingredients.
Serves 4.
