Mediterranean lentil salad

- 1 cup dry lentils, rinsed
- 1 cup diced carrot
- 1 cup diced onion
- 4 cloves garlic, minced
- 1 bay leaf
- ½ teaspoon dry thyme
- ¼ cup lemon juice
- ½ cup diced celery
- ¼ cup chopped parsley
- 1 teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup olive oil
- 2 tablespoons vinegar
Instructions
- Combine lentils, carrots, onion, garlic, bay leaf, and thyme in saucepan. Cover with water by one inch.
- Simmer uncovered 15-20 minutes. Drain.
- Combine remaining ingredients to make dressing.
- Add remaining ingredients. Toss and serve at room temperature
