Pumpkin chip cookies

Makes 10 dozen.
- 1½ cups butter, softened
- 2 cups brown sugar
- 1 cup white sugar
- 1 15-ounce can pumpkin
- 1 egg
- 1 teaspoon vanilla
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 4 cups flour
- 2 cups rolled oats
- 2 cups semisweet chocolate chips
Instructions
- Preheat oven to 350 degrees.
- Cream butter and sugars. Add pumpkin, egg, vanilla, baking soda, cinnamon, and salt.
- Gradually add flour and oats. Stir in chocolate chips.
- Drop by tablespoonfuls 2 inches apart onto ungreased baking sheets.
- Bake for 10-12 minutes or until lightly browned.
