- 2 cups flour
- 1 cup sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 2 eggs
- 1 cup milk
- ½ cup canola oil
- 1 teaspoon lemon extract
- 1 cup fresh or frozen raspberries
Instructions
- Preheat oven to 400 and prepare 12 muffin cups.
- Combine dry ingredients. Add wet ingredients. Fold in raspberries.
- Fill muffin cups ⅔ full.
- Bake 18-20 minutes.
