Lemon curd

Makes 1 pint.
- 3 eggs
- 3 lemons
- 1 stick butter or margarine
- 1 cup sugar
- pinch salt
Instructions
- Juice and zest lemons.
- Beat eggs lightly and mix in lemon juice and rind, butter, sugar, and salt.
- Put in double boiler and heat gently, stirring occasionally, until the sugar has dissolved and the curd thickens.
- Store in refrigerator for up to 3 months.
Makes 1 pint.
