Farmhouse chocolate cake

- 5 ounces unsweetened chocolate, chopped
- 2 tablespoons honey
- ½ cup boiling water
- ½ cup butter, softened
- ¼ cup shortening
- 2 cups sugar
- 5 eggs
- 1 cup mashed potatoes
- 2 teaspoons vanilla
- 2 teaspoons baking soda
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1¾ cups flour
- ½ cup cold water
Instructions
- Heat oven to 350 degrees. Grease and flour a 10” Bundt pan.
- Combine chocolate and honey with boiling water. Stir occasionally; let melt and cool.
- Cream butter and shortening. Gradually add sugar.
- Add eggs one at a time, beating at least 1 minute after each.
- Add chocolate mixture, potatoes, vanilla, baking soda, salt, and pepper.
- Add flour and cold water alternately. Stir until just combined and smooth.
- Pour batter in pan and hit on counter to remove air bubbles.
- Bake 50 minutes. Cool in pan on rack 10 minutes, then turn cake out. Dust with powdered sugar if desired.
