Blackberry pie

- 4 cups blackberries
- ¾ cup sugar
- 3 tablespoons cornstarch
- 1 tablespoon butter, melted
- 1 tablespoon lemon juice
- 1 tablespoon water
- 1 tablespoon tapioca
- 1 egg white, lightly beaten
- 1 tablespoon sugar
- double pie crust
Instructions
- Preheat oven to 400 degrees.
- Toss together berries, sugar, cornstarch, butter, lemon juice, water, and tapioca. Let stand 20 minutes, tossing occasionally.
- Roll out pie crust and assemble pie.
- Brush top with egg white and sprinkle with sugar.
- Place on a baking sheet and bake until crust is golden brown and filling is bubbling, 60-70 minutes. Cover edges of pie if necessary.
- Cool completely before serving.
