Lemon lentil rice

- 1 tablespoon oil
- 1 teaspoon mustard seed
- 2 carrots, chopped
- 2 cups water
- 1 cup rice
- 1 teaspoon chili powder
- ½ teaspoon salt
- 1 cup lentils
- 1 can green beans, drained
- ¼ cup lemon juice
Instructions
- Heat oil in saucepan over medium-high heat. Cook mustard seeds until they pop.
- Add carrots; sauté 2 minutes. Add water, rice, chili powder, and salt.
- Bring to a boil; simmer 15 minutes.
- Boil lentils in separate pot 15-20 minutes.
- Combine lentils, rice, green beans, and lemon juice.
