Mexican rice

Ingredients
  • 1 cup rice
  • 1 tablespoon oil
  • 2 cloves garlic, minced
  • 1 onion, chopped (optional)
  • 1 14.5-ounce can chopped tomatoes
  • 1 1/4 cup water
  • 1 teaspoon chicken or beef bouillon powder
  • 1 tablespoon chili powder

Instructions
  1. Cook onion (if using) in oil. Add rice and sauté until golden brown. Add garlic and spices.
  2. Add remaining ingredients; cover and bring to a boil.
  3. Simmer 20–25 minutes.
