Zucchini lentil sandwiches

Ingredients
  • 2 small zucchini, thinly sliced
  • 1 teaspoon canola oil
  • 1 cup lentils, cooked
  • ¼ teaspoon red pepper flakes
  • 1 8-ounce can tomato sauce
  • ½ teaspoon Italian seasoning
  • 8 thin slices mozzarella cheese
  • 4 sandwich buns

Instructions
  1. Preheat oven to 350 degrees.
  2. Fry zucchini in oil. Add lentils, sauce, and spices.
  3. Put a slice of cheese on each side of each bun. Fill with zucchini mixture.
  4. Wrap sandwiches in foil. Bake 15 minutes.
