- 2 small zucchini, thinly sliced
- 1 teaspoon canola oil
- 1 cup lentils, cooked
- ¼ teaspoon red pepper flakes
- 1 8-ounce can tomato sauce
- ½ teaspoon Italian seasoning
- 8 thin slices mozzarella cheese
- 4 sandwich buns
- Preheat oven to 350 degrees.
- Fry zucchini in oil. Add lentils, sauce, and spices.
- Put a slice of cheese on each side of each bun. Fill with zucchini mixture.
- Wrap sandwiches in foil. Bake 15 minutes.
