Couscous cucumber salad

- 5 ounces couscous
- 1 cup water
- 1 teaspoon chicken bouillon
- ½ cup chopped fresh parsley
- ½ cup chopped green onion
- 2 carrots, chopped
- 1 cucumber, chopped
- ½ pound chickpeas, cooked
- ½ cup lemon juice
- 2 tablespoons olive oil
- ground black pepper
- ¼ teaspoon lemon pepper
- ½ teaspoon garlic powder
Instructions
- Bring water and bouillon to a boil. Add couscous and let sit, covered, for five minutes.
- Combine with remaining ingredients. Refrigerate.
