Couscous cucumber salad

Ingredients
  • 5 ounces couscous
  • 1 cup water
  • 1 teaspoon chicken bouillon
  • ½ cup chopped fresh parsley
  • ½ cup chopped green onion
  • 2 carrots, chopped
  • 1 cucumber, chopped
  • ½ pound chickpeas, cooked
  • ½ cup lemon juice
  • 2 tablespoons olive oil
  • ground black pepper
  • ¼ teaspoon lemon pepper
  • ½ teaspoon garlic powder

Instructions
  1. Bring water and bouillon to a boil. Add couscous and let sit, covered, for five minutes.
  2. Combine with remaining ingredients. Refrigerate.
