Quinoa vegetable soup

- 1 stalk celery, chopped
- 2 cloves garlic, minced
- 1 carrot, chopped
- 1 onion, chopped
- ½ cup chopped cabbage
- 1 tablespoon olive oil
- ¼ cup quinoa, rinsed
- 3 cups water
- 3 teaspoons chicken bouillon
- 1 14-ounce can tomatoes
- ¼ cup chopped fresh parsley
- ¼ teaspoon thyme
- 1 bay leaf
- ¼ teaspoon black pepper
Instructions
- Sauté vegetables in oil until tender.
- Add quinoa and cook until the grains begin to pop.
- Add remaining ingredients. Simmer 30 minutes.
