Lentil soup

Serves 6.
- 1 onion, chopped
- 3 carrots, chopped
- 2 stalks celery, chopped
- 4 cloves garlic, chopped
- 2 tablespoons oil
- 1 teaspoon oregano
- 1 bay leaf
- 1 teaspoon basil
- 1 14-ounce can chopped tomatoes
- 2 cups dry lentils, rinsed
- 8 cups water
- 2 tablespoons balsamic vinegar
- 1 teaspoon salt
- ½ teaspoon pepper
Instructions
- Cook vegetables in oil.
- Add oregano, bay leaf, basil, tomatoes, lentils, and water. Bring to a boil.
- Simmer 1 hour.
- Add vinegar, salt, and pepper.
Serves 6.
