- 1 cup bulgur
- 1⅔ cups boiling water
- ¼ cup olive oil
- ⅓ cup lemon juice
- 1 tablespoon white vinegar
- 1 cup chopped green onions
- 1 cup chopped fresh parsley
- 3 tomatoes, chopped
- 1 cucumber, chopped
- 1 teaspoon salt
- ground black pepper
Instructions
- Combine bulgur and boiling water. Cover and let sit 1 hour.
- Add remaining ingredients. Refrigerate 1 hour.
