Pumpkin chip cookies

Ingredients
  • 1½ cups butter, softened
  • 2 cups brown sugar
  • 1 cup white sugar
  • 1 15-ounce can pumpkin
  • 1 egg
  • 1 teaspoon vanilla
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 4 cups flour
  • 2 cups rolled oats
  • 2 cups semisweet chocolate chips

Instructions
  1. Preheat oven to 350 degrees.
  2. Cream butter and sugars. Add pumpkin, egg, vanilla, baking soda, cinnamon, and salt.
  3. Gradually add flour and oats. Stir in chocolate chips.
  4. Drop by tablespoonfuls 2 inches apart onto ungreased baking sheets.
  5. Bake for 10-12 minutes or until lightly browned.

Makes 10 dozen.
